Under the ships menu > AI ships if you select a ship that has cargo it should be displayed first thing in the info box. Not sure if that's what you're looking for.

Probably already suggested, but it would be nice if you could select ships from the sector view. This would make exploring with probes or just general ship management a little bit quicker.
