You can play on as many servers as you want. If a game starts and you were not signed up for it you'll no longer see it in your server listing. Currently there's a bug that makes it very easy to unjoin a server because if you touch anywhere in the empty portion of the server listing it will toggle your join status. This bug has been fixed in the next client which will be going out to Apple for approval very soon.
